PIC voluntarily threw out everything in the malfunctioning coolers. He adjusted the defrost timer in the cooler, and it cooled down to 41 deg F during inspection. Send me an invoice of work done to the cooler by 9/9/24.

Employee placed their backpack on the dishwasher.

Manager moved the backpack to the office. Employee belongings must be in a designated place, and not where they can contaminate dishes.

Hand sink at the bar had a pitcher inside of it, and a glass near on the counter near it.

Bartender moved the pitcher and glass. Hand sinks can only be used for handwashing to prevent contamination.

Manager had employee clean the cooler. Spill seemed more than an hour old. Clean spills promptly. Manager said that it was likely from this morning.

8. Observed an employee wearing gloves and actively using his cell phone in the kitchen. COS, Discussed the issue with PIC and employee was instructed to remove gloves and properly wash hands before placing new gloves. Cell phones should only be used in designated areas and not while wearing single use gloves.

Green wire racks across from the walk-in freezer / cooler have paint chipping and are harboring food debris and dust.

Ensure the wire racks are cleaned frequently and maintain routine cleaning.

Observed a quat bucket in the kitchen to test at 100ppm. Maintain quat concentration between 150-400ppm.

PIC re-made the bucket and it tested at 200ppm.
