15. Ready to eat tortilla shells were being stored under raw sausage and raw bacon. Raw bacon was being stored over ready to eat ham. Protect food during storage by storing all ready to eat food items above raw products. Corrected on site by relocating the listed items.
16. The small bucket of sanitizer located in the Deli area tested at 0ppm of available quat sanitizer. It was determined that the wiping cloth absorbed the sanitizer and the liquid level needs to be higher in the bucket to prevent this from happening in the future. Maintain all quat sanitizer at 200-400ppm. The sanitizer was remade and now tests at 200ppm.
55. The following locations need to be cleaned: 1. The floor under the 3-compartment sink at the Deli. 2. The upper wall and exterior of the cake decorating containers in the corner of the Bakery area. 3. The ceiling tiles and exterior of the light covers on the ceiling near the microwave. 4. A ceiling tile is missing above the 3-compartment sink at the Deli area. Maintain all floors, walls, ceilings and attached equipment clean, smooth and easily cleanable. Clean the areas needed and replace the ceiling tile.

55. 1. The corner of the upper wall near the cake decorating storage area is soiled. 2. The ceiling near the fans in the Deli walk-in cooler is soiled. 3. The ceiling/fan covers in the produce walk-in cooler is soiled. Maintain all ceilings and attached equipment clean. Clean these areas as often as necessary.
49. The lower racks and paper underneath where the gallons of milk are located in the display cooler are soiled. Maintain all non-food contact surfaces clean. Clean the racks and replace the papers underneath as often as necessary.
47. The top interior surface of the Panasonic microwave located in the Deli area is peeling/chipping paint. All food-contact surfaces shall be smooth, easily cleanable and in good repair. Either resurface the area or replace the microwave to prevent contamination of food items which cook inside.
15. Some rolls of raw sausage and some packages of raw bacon were seen stored over top of ready to eat packages of brats and polish sausage. Protect food at all times. Corrected on site. The items have been relocated to be in a separate location.

55. The floor under and around stationary equipment in the Deli area is soiled. Also, the wall outside the walk-in freezer in the Deli is soiled. Clean these areas as often as needed and by the next routine inspection.
49. The top of the Alto-Shaam Oven in the Deli is soiled. Also, the exterior of the thermometers in the produce coolers (the ones on the top) are soiled. Clean these by the next routine inspection.
