PERDUE'S GRILL VIEW FULL INSPECTION

6. Observed a can of Celsius on the prep line cooler. COS, the can was removed after reviewing with the PIC. Employee drinks should be located in a desigated area away from food prep. *Also noted that employee drinks should be in a cup with a straw
38. Facility had the back door propped open allowing the entrance of numerous flies. COS, The door was shut to prevent the entry of pests.
43. Observed the spoon to serve cole slaw in the server station cooler fully submerged in the coleslaw. Discussed this with the PIC, it was COS. In use utensils shall be stored with the handles above the food.
55. Numerous tiles are broken or loose in the pizza prep/dish room. This was noted at the last inspection. PIC stated that the landlord and facility will be working to re-do the entire floor in the coming months. He does plan to shut down the facility during this repair.

10. Observed the Women's restroom handsink and the kitchen bathroom without signs notifying employees to wash hands before returning to work. COS, signs were provided and hung during the inspection
49. Observed non-food contact surfaces such as the floors and base boards in the fry and grill line that had an accumulation of grease. Clean these areas more frequently so that accumulation of grease and food does not occur.

10. *** There were no paper towels at the hand sink in the kitchen. *** COS Paper towels were replenished when asked. Employee said that they had just run out before I arrived. Replace paper towels as soon as they run out.
10. *** There was no hand washing sign in the employee restroom. *** COS Owner placed a handwashing sign in the employee bathroom.
15. *** Observed meatballs in container on top of boiled eggs in the prep table. *** COS Employee moved the meatballs underneath the prep table. Raw animal product cannot be stored above ready-to-eat (RTE) foods.
53. *** The toilet and sink in the employee restroom are dirty. *** Clean before next routine inspection.
55. *** Ventilation over the fryers, stove, and flattop had a build up of grease and dust. *** Clean before next routine inspection. The owner said that the vents were scheduled to be cleaned the following Monday.
56. *** Fluorescent lights in the kitchen were not covered in the food preparation area. *** Cover lights by next routine inspection.

2. *** PIC was not a CFPM. *** There needs to be a CFPM on site at all times. I am including links in my email with this report on how to get more employees certified.
22. *** Food in the pizza prep table was around 45 deg F. *** The Freon in the prep table is low, and, therefore, the table is not working. The employees had been filling the table with ice, and it did not hold the temperature of the table. The food was moved to the walk-in and did not need to be thrown away as it had been taken out of the walk-in in the past hour. The prep table cannot be used until the Freon has been replaced. Send me the receipt of the Freon. I will return on 7/7/23 to check that the prep table is holding temperature.
25. *** Facility serves cook-to-order steak and hamburgers. There is no consumer advisory on the menu *** There needs to be a consumer advisory posted if the restaurant intends to serves raw or undercooked food. Please add this to the menu before next routine inspection.
55. *** The floor is the walk-in cooler has significant build-up of debris to the point of being unsanitary. *** Clean the floor of the walk-in. I will be back 7/11/23 to check that the floor as been cleaned.
