10. Paper towels were missing from the hand sink at the bar. Provide paper towels and supplies at all hand sinks at all times to ensure proper hand washing. **Corrected on site by providing paper towels during the inspection.
16. The dish machine sanitizer was out and the machine tested at 0ppm of available chlorine during the inspection. The dish machine that is chlorine sanitizing needs to tests between 50-100ppm of available chlorine for proper sanitizing. **Corrected on site by replacing the sanitizer and now tests at 100ppm.
55. The lower interior portion of the door in the walk-in cooler and the middle of the floor in the walk-in cooler are in need of repair. Repair/replace or resurface this area by the next routine inspections so they are smooth and easily cleanable.

55. The lower interior surface of the door of the walk-in cooler and the floor of the walk-in cooler are in need of repair. Maintain all floors and attached equipment in good repair and so they are smooth and easily cleanable.
55. The coving along the wall behind the 2 door stainless steel prep cooler and the steam table in the kitchen cookline area is missing. Maintain all walls in good repair and seal any gaps by replacing coving or sealing the wall in another means. Repair by next routine inspection.
22. The two door keg cooler at the bar area had an air temperature of 60 degrees F and the milk temped at 51 degrees and the tomato juice cocktail temped at 55 degrees. It was determined that a break had been tripped for the cooler. The milk and tomato juice were voluntarily disposed of and the cooler breaker was reset. The air temperature is now at 41 degrees F. Continue to monitor the air temperature. Maintain all cold TCS (time/temperature control for safety) at 41 degrees F or below at all times. Corrected on site.

51. The hand sink located near the dish machine has a leak. Maintain all plumbing and repair the hand sink.
39. A plastic bucket with duck tape on the bottom of it was being used to dispense beans out of the large white container at the back of the kitchen. Scoops with a handle stored out of the food product and one that is in good repair shall be used to dispense food items. The bucket has been disposed of.
22. The two door stainless steal cooler at the cookline, where the guacamole and cut lettuce are being held, temps at 51 degrees F. The food items are between 51-55 degrees F. The tamales, shredded cheese, diced tomatoes, and all dairy products have been voluntarily disposed of. The machine will be repaired tomorrow. A recheck will occur on or after 6/7/24. Contact Kate at kbrown@tchd.net once it and the hand sink have been repaired.
21. The queso, ground beef and three different sauces which are being held in the steam table at the cook line have a temperature ranging from 110-125 degrees F. The food items have been there since 11am (3 hours ago). The food items have been removed from the steam table & are being rapidly reheated on the flat top grill. The steam table dials are being adjusted and more water is being added to the steam table. The temperature has been retested of the food items and they now are at 165 degrees F or above and the hot holding unit now is capable of holding the food items at 135 degrees F or above. Monitor the temperature of the hot holding units and the food items to make sure they're maintaining proper hot holding temperatures.
10. The hand sink at the cookline has the hot water turned off due to a leak. The cold water is available. Hot and cold water need to be available at all times. Repair this sink so hot and cold water is available. A follow-up will occur on or after 6/7/24. Contact Kate at kbrown@tchd.net when this sink is repaired.

56. Lighting in walk in freezer and walk in cooler was inadequate to work in. Increase lighting by next regular inspection.
55. In the dishroom, the wall is taped up where an outlet used to be. The new outlet is not protected from water during weekly power washing. The person in charge has placed a plastic grocery bag over the outlet, to be placed over the outlet during power washings. Floor of the walk in cooler is buckling at the middle seam.
55. The dishroom 3 compartment sink in the dishroom has lost most of its caulk, causing the wall to not be easily cleanable. Recaulk 3 compartment sink by next routine inspection.
49. Shelving of walk in cooler is heavily soiled. Wash, rinse and sanitize by next routine inspection.
47. The following non-food contact surfaces were found to be cracked and chipped as to not be smooth and easily cleanable: Floor tiles throughout the kitchen, dishroom and dry storage. Rack in the dish room is covered in aluminum foil to cover area that is no longer easily cleanable. Pass through window counter. Walk-in cooler door.
44. Observed pot holders used for hot plates soiled with dried food. Person in charge said they are laundered weekly. Launder linens when soiled.
39. Food observed uncovered in the walk in freezer (sauces, potatoes, etc), onion in the walk in cooler, parsley, and rice. A styrofoam cup containing pepper was on a shelf with no lid.
38. Observed back exterior door to not be tight fitting on the bottom. Add a sweep by next regular inspection.
33. Chorizo in the walk in cooler was cooling in a tall pan. Use short shallow pans so cooling can occur within acceptable time frame. ***COS Placed in shallow pan.
25. Consumer advisory was not posted for customers to see. Post consumer advisory in menu or a prominent place for customers to see. A follow up inspection will occur on or after 11/23/23 to verify consumer advisory has been posted.
15. Observed cook put on gloves, touch food with gloves, touch utensils, food and then open oven with same gloved hands. He picked up a little, then opened the oven, removed the plates, then grabbed lettuce with the same gloved hands. When using gloves, only use for one task, then discard gloves and wash hands before putting on new ones. ***COS Education given to person in charge.
10. Hot water knob in handsink in kitchen does not turn. Repair handsink so hot water is available. A follow up inspection will occur on or after November 23, 2023.
