An employee diluted the sanitizer solution, and it tested at 50 ppm.

Queso and beans were in containers with no lids. And, cases of meat and food in buckets were stored directly on the floor.

Employees placed lids on containers. The queso had ice wands in them. I explained that the ice wands may be removed, and lids placed on the queso after the food has been cooled. Food was moved at least 6 in off the floor.

I found shrimp and fish above french fries and chopped vegetables in the 2 door cooler.

Raw animal products must be stored below vegetables and other RTE foods due to the risk of cross contamination. The employees moved the shrimp and and fish to the bottom shelf and moved the vegetables and fries to a high shelf.

All containers of queso and two containers of re fried beans in the walk-in had no lids.

Lids were placed on all the open containers. The PIC said that the employees know that the lids are supposed to be placed after the product cools, but likely forgot to do that yesterday.

The lip of the inside of the deep freezer was soiled with frozen meat drippings. The ceiling had some grease and dust. The dry storage area had debris under the shelves.

Clean the above mentioned areas before next routine inspection.

The PIC's CFPM license expired last month.

The PIC is signed up at the Farm Bureau to renew her license. There needs to be someone who is certified on site at all times. I will send the link to the Serv Safe website, and I recommended the online class in Spanish.

There was a broom propped up against the sink that made the sink inaccessible.

The sink must be clear at all times. The broom was moved out of the way of the sink.

The hand sink had no soap near it.

An employee indicated that they use the dish washing soap near the dish sink to wash their hands. There must be a dedicated soap near the hand sink to use for washing hands. Hand soap was placed at the sink .

Several items had no date on them, and one container of chilies were made 8-4.

All food that had no label was identified by several people to be made this morning. All food, including tamales, queso, peppers, and salsas were labeled correctly. The chilies were thrown out.

The door to the kitchen was open. The screen has been removed.

The door cannot be open without a screen. The screen is in the process of being replaced per the PIC. The door was closed.

A lettuce, peppers, and meat were stored on the floor of the walk-in cooler.

Have the steam table clean and free of debris by the next routine inspection.
