23. Polish sausages, Cheddarwurst and Beef Hot Dogs were improperly date marked.

Employee was using a date mark that denotes time the products were pulled from the freezer until the time the company said the bag must be opened. After opening the bag, a new date mark was not being added. The person in charge retrained the employees and appropriate date labels were added to the products in question.

38. Observed the back door cracked open. Doors must be kept closed to limit pests access to the facility.
Ensure the door is maintained closed for the next routine inspection.
28. Observed a box of Jack Links sausages stored in the back room on the same shelving unit with chemical products above and below it.
The items were moved. This is a repeat violation. If this violations is observed again, there is the potential for enforcement actions.
23. Facility uses a date marking sticker that indicates the pull from freezer date, ready to use date and discard date. The package open date may not also be the ready to use date.
According to an email on 12/7/22 from the category manager food service at Circle K, a new sticker should be put on the container when the package is open.
I observed an open package of sausages in the walk in cooler without a new sticker. The original sticker on the sausages says discard date of 5/25/23. Anything left over at the end of the day must be discarded.
I also observed a container of open sausages in the cooler without a date markings. The PIC was unsure when the package was opened so it was discarded. Corrected on site.
Ensure items are date marked once open and are used with 7 days total. The open date counts as day 1.
16. Observed sanitizer spray bottle at the front counter with a concentration of 0ppm. Maintain quat sanitizer at required concentration from the manufacturer. (200-400ppm)
Sanitizer was discarded. Corrected onsite.
2. There was no certified food protection manager on site during the inspection. As a category 2, a CFPM must be present in the facility at all times the facility is conducting category 2 practices.
By the next routine inspection, ensure there are enough CFPMs to cover every shift.
