16. Dishmachine measured 0 ppm. Upon inspection, the sanitizer was empty. ***COS The sanitizer was replaced and measured at 50 ppm.
41. Wiping cloths in the kitchen were observed sitting on the counters. Assure wiping cloths are stored in sanitizer water between uses to prevent the growth of bacteria.
49. The outside surfaces of the fryer, the pizza oven, and freezer handles need to be cleaned. Clean and maintain clean by next routine inspection.
55. The ceiling and walls of the dishroom are soiled and have an accumulation of dust. Clean and maintain clean, walls and ceiling of the dishroom by next routine inspection.

55. Floors throughout the kitchen are cracked and losing enamel, making them no longer smooth and easily cleanable. Repair by next routine inspection.
28. Working container of pink cleaner observed without a label. ***COS Labeled the container.
22. Pizza prep table is not holding at or below 41F. The left side and middle of the top and bottom of cooler is holding appropriately, however, the right side is holding at 45F. Foods on the right side of the pizza prep cooler are holding between 43F and 47F. A work order was placed immediately. TCS foods on the right side of the cooler have been moved to the middle or left sides. The left side can only be used for non-TCS foods until the unit is repaired and a follow up has occurred. A follow up will occur on Monday, February 5, 2024. If the cooler is repaired earlier, contact Dawn at 309-929-0250 or dgiovanetto@tchd.net for an earlier follow up.

55. *** Observed multiple base boards to be off of the wall creating a good area for pests to harbor. Also observed the ball latch on the walk-in cooler to still not be repaired. *** Ensure that these items are fixed by the next routine inspection.
55. *** Multiple ceiling vents were soiled with dust. *** Ensure that the vents are routinely cleaned to prevent build-up of debris.
49. *** Observed multiple non-food contact surfaces to be soiled such as the rack by the back hand-sink, the soap dispenser, the hand-sink itself, the side of the freezer near the pizza prep station. *** Ensure routine cleaning schedule is put in place and followed.
37. *** Observed a salt shaker without a label. *** Ensure that all items that can be mistaken for a similar item have the common name of the ingredient labeled on the outside.
8. *** Upon arrival, observed two employees working the front to wash hands and turn off the faucet with bare hands. Ensure a barrier is used to turn off the faucet after hand washing. ***COS Inspector informed PIC and they informed the employees how to properly turn off the faucet with a barrier.
