8. Observed food handler in the kitchen enter the kitchen and start portioning canned fruit without first washing hands. Hands must be washed when returning to the kitchen and before working with food. Food handler was retrained during the inspection. Corrected on-site.
8. Observed food handler wash hands and turn the faucet off with bare hands. A paper towel must be used to turn the faucet off the avoid recontamination of the hands. Employee was retrained during inspection. Corrected on site.
10. Hand washing sink in kitchen did not have hand washing sign. Sign was provided and posted. Corrected on site.
16. Observed the sanitizer bucket in the kitchen with a concentration of around 25ppm. Chlorine sanitizer must have a concentration between 50-100ppm. The sanitizer was remade. Corrected on site. This is the third repeat violation. A risk control plan was completed during the last routine inspection. A pre-hearing enforcement conference may be scheduled with the food program manager.
28. Observed a working spray bottle of sanitizer hanging on a wire rack with food and food contact surfaces below the bottle. The bottle was moved. Ensure sanitizers are stored physically away from and below food and food contact surfaces. Corrected on site.
35. Observed what appeared to be previously frozen hummus on the wire shelf in the kitchen thawing at room temperature. This is not an approved thawing method. Items shall be thawed under running water or in the cooler with a temperature of 41F or below by the next routine inspection
56. Observed a personal water bottle stored on the prep table next to food. Ensure personal drinks are stored away from and below food by the next routine inspection. Personal drinks should also have a lid and a straw.
