48. Hot water dish machine in the dish room of the main kitchen had temperature gauges for the wash and rinse that were not functioning. The facility had records of daily temperature verification, and proper functioning is maintained. Fix temperature gauges and send an invoice to Dawn at dgiovanetto@tchd.net when gauges are repaired.

16. Several quat sanitizer buckets were measured at 100 ppm.

Refilled buckets with sanitizer at 200-300 ppm. In the future change buckets at 9 instead of 10, and pull sanitizer water from 3 compartment sink.

28. Observed a sanitizer bucket in the main kitchen sitting on top of a box of protein shakes. The sanitizer bucket was moved so it was below and separate from food and food contact surfaces.
This is a repeat violation. A risk control plan will be completed with the PIC.
