16. The concentration of the dish machine for Chlorine was at 0ppm. COS, PIC called company to fix the issue and facility was instructed to use the 3 compartment sink until the concentration in the dish machine is at 50-100 ppm. Will follow up on Friday 8/8/24.
36. The walk in cooler did not have a temp measuring device internally to measure the temperatur and the dial stem thermometer used was broken. Provide devices to measure ambient air in coolers and internal temperatures of cooked food.
39. Observed uncovered food in the walk in cooler. COS, lids were placed on food bins. Ensure all food is covered to prevent contamination.

10. Hand sink near prep area was out of paper towels- COS, the towels were re stocked during the inspection.
55. The metal floor ramp of the walk in cooler is starting to come up in some areas causing a trip hazard as well as causing issues for keeping the floor cleaned. Re seal to the floor or replace by next routine inspection.

15. Observed raw beef stored above premade sauces in prep line cooler, COS, Raw meat was moved below the sauces.
16. Observed two buckets of chlorine sanitizer with a concentration of 0 ppm. Buckets were re made to 50 ppm. COS.
39. Observed food items such as prepped veggies stored in the walk in cooler with no lid. COS, lids were placed on the uncovered items in the walk in cooler. Ensure food items are covered to prevent contamination at all times.
43. Obsereved handles of scoops submerged in food items such as beans and rice. Ensure handles are stored upright above the food. COS.
49. Observed an accumulation of grease and some food debris under equipment of prep line. Clean under equipment more frequently so that accumulation of grease deposits and food does not occur.
