2. No CFPM onsite during the inspections. The two onfile do still work at the facility but were off at the time. DIscussed with the GM that there should be on present at all times of operation. Showed him where to sign up for the class offered by TCHD.
49. Observed heavy grease deposits on the floor surrounding the fryer area and under the drying rack of pots and pans near 3 compartment sink

8. Observed an employee don gloves on their hands prior to slicing meat wihtout first washing their hands. COS, educated employee that hands should always be washed properly before putting gloves on to engage in food prep.

2. During the inspection, there was no CFPM on-site. The deli does have 2 that are staffed but they were not present during the inspection. Ensure someone that is a CFPM is here at all times of operation.
3. During the routine inspection, an empoyee illness policy could not be produced. Provided facility with Form 1-b. Review this policy with employees and any new hires and keep on hand.
8. Observed an employee use their bare hands to turn off the water faucet before putting on a new pair of gloves. COS, re-trained employee on how to properly was hands.
15. Observed raw ground beef stored above eggs in the walk in cooler. COS, Ground beef was removed to be cooked.
49. Observed food and grease build up under fryer and grill area as well as the gaskets along the deli cooler case. Clean these areas more frequently so that build up does not occur.

10. Hand washing sink in bakery area was blocked by buckets. Buckets were moved.
41. Wiping cloth bucket Quaternary ammonia sanitizing solution was too weak (was at 10ppm). Maintain at 150 to 400 ppm. Wiping cloth bucket Quaternary ammonia solution was re-made to 200ppm.
51. Condensation is leaking inside of walk-in refrigerator. Repair walk-in refrigerator so that condensation is properly drained before next regular inspection.
