23. Large container of shepherd's pie and container of Cole slaw in walk-in refrigerator had date labels that were 10 days old. Discard any TCS food in refrigeration if it is over 6 days old. Both containers of outdated food were voluntarily discarded by Person-in-Charge.

2. Certified Food Protection Manager was not present in facility. CFPM must be present whenever food is prepared. All shifts must have Certified Food Protection Manger within 90 days of this report.
21. Sloppy Joe meat in hot holding was 130F. TCS foods must be maintained at 135F. or higher in hot holding units. Sloppy Joe meat was voluntarily discarded by Person-in-Charge.
55. Ceiling and walls in basement walk-in refrigerator are badly deteriorated and must be repaired by next regular inspection.

55. Inside Floor, walls, and ceiling of basement walk-in refrigerator are not cleanable and are covered in organic growth. Inside of walk-in refrigerator must be re-surfaced before next regular inspection.

22. Observed the heavy cream/half & half in a bar cooler with a temperature of around 54F. The time and temperature controlled for safety foods must be discarded. There was also chicken salad in the cooler with a temperature around 46F. The PIC stated it was only out for the lunch rush. Ensure time and temperature controlled for safety foods are kept 41 F or below. Corrected onsite. Dairy products discarded.
51. Observed an area in the basement (down the stairs and to the right) with water leaking from the ceiling. Per the PIC, it is from the ice machine drainage. Repair so it is not leaking by the next routine inspection.
55. Observed an unapproved material for the floors in the walk in cooler in the basement. The floors are currently an absorbent plastic type mat. Ensure the floors are replaced with an approved material by the next routine inspection. This is a repeat. Extended to next routine inspection
58. CFPM has not received allergen training. Send certificate in 30 days. This is a repeat violation
16. Observed the microwave in the kitchen with food debris build up. Ensure the microwave is cleaned at least every 24 hours using a method recommended by the manufacturer by the next routine inspection.
