During the time of the inspection, there was not a CFPM on site. The PIC possessed a FH certification but no CFPM certification. The PIC was informed of approved courses that can be taken to obtain the certificate. The PIC was also reminded that a CFPM must be present during all food service hours. Ensure that at least one member of the day staff is registered for an approved CFPM course by January 1st, 2025. Send proof of registration to kalleyne@tchd.net.

The manager did not have his Certified Food Protection Manager certificate.

As stated in the pre-opening completed on 4/19/23, as a "category II food facility, you must have a Certified Food Manager on duty during hours of food preparation".

The handwashing sink near the warewashing area had gloves and cleaning utensils inside of it.

Manager moved the items out of the sink. The hand sink must be accessible at all times for hand washing and not used for any other purpose than washing hands.

PIC made a sanitizer bucket that tested to 200 ppm.

Manager diluted the bucket, and it was tested to 100 ppm. The bucket used was very small, and PIC used a cap full of bleach. I recommend using half a cap to a few drops of bleach if the small container is constantly used.

Found air fresher stored with food above food preparation areas.

PIC moved the air freshener way from the food.

The facility had no test strips for its sanitizer.

Procure test strips for chlorine sanitizer by next routine inspection.

Found organic growth on the inside lip of the ice machine.

Clean the ice machine. I will be back on Wednesday, November 20th, 2023, to inspect the ice machine and see that it is clean of organic growth.
