23. *** Found dips labeled 2-7 and pasta labeled 2-7. Today is 2/21. *** COS Manager threw out both foods. She explained that the goat cheese in the dip had a use by date beyond 7 days. I explained that TCS foods that are prepared or combined on the establishment may not be held for more than 7 days. I also explained that pasta that has been heat treated is TCS and may not be held for longer than 7 days. We discussed date labeling and TCS foods. I will include education in my email about both topics.
