22. The Master Bilt cooler located in the kitchen has an internal air temp of 55 degrees F. The butter, half and half, brats and chicken base all temp at 55 degrees as well. The food items have been voluntarily disposed of. The cooler has been unplugged and will be getting worked on. Contact Kate Brown at kbrown@tchd.net or call 309-929-0239 once this cooler has been repaired for a recheck prior to using.

49. The vent on the right side of the exterior surface of the ice machine in the kitchen is soiled. Maintain all non-food contact surfaces clean.

55. 1. The ceiling tiles on the employee women's restroom ceiling are soiled and/or missing. 2. The light cover on the ceiling of the employee women's restroom is out of place. 3. The ventilation hood above the dish machine is soiled. Maintain all ceilings and attached equipment clean and in good repair. Replace the ceiling tiles, reconnect the light cover and clean the ventilation hood.

55. The floor and wall behind and below the fryers and cookline is heavily soiled with grease build-up. The PIC said he hasn't been able to clean that area just yet and it is on the schedule. Maintain all floors, walls and attached equipment clean. The ceiling tiles on the ceiling of the women's restroom in the kitchen, are not in place. Maintain this area in good repair and repair/replace the missing tiles.

48. Hot water temperature test strips are not provided for the hot water sanitizing dish machine. Provide test strips for this machine to ensure the temperature is reaching high enough to properly sanitize.

40. The PIC was observed with two bracelets and a watch on his wrists during food preparation. Only a plain wedding band is allowed during food preparation. Corrected on site through discussion/education.

8. The person in charge (PIC) was seen washing his hands and then turning the hand sink off without a barrier/paper towel. Provide a barrier when turning the hand sink off to not re-contaminate hands. Corrected on site through education/conversation.

41. Wiping cloths were observed out on counters in food preparation area. Wiping cloths were put in sanitizer buckets.

19. chili had been placed in hot holding unit without first being reheated properly. Chili was reheated to 165F.
