8. *** Inspector witnessed employee turn off faucet with bare hands before drying her hands. *** COS Inspector informed employee to turn of faucet with a barrier. When employee washed her hands again, she turned of faucet with barrier.
23. *** Roasted peppers with prep date of 1/22 where in the walk-in cooler. Today's date is 1/30/ *** COS Manager threw out roasted peppers.
44. *** Measuring cups in back prep area were stored with handles overlapping scoop cup. *** COS Employee rearranged all utensils so that the handles were facing the same way.
55. *** Underneath, behind, and between the grills there is a build-up of grease and debris. *** Increase cleaning frequency before next routine inspection. Manager said that they were working on cleaning schedules recently.

9. *** Employee at grill grabbed sauteed peppers from cold holding with bare hand and placed them in the microwave to heat up. They were heated to 110 deg F in the microwave. *** COS I stopped the employee from adding them to an omelet, as they were not heated to 145 deg F, the temperature that non-animal foods are deemed safe to eat after bare hand contact. He threw the heated and cold-holding peppers away and added a scoop to the new peppers in cold holding. Use a scoop or gloved hand to portion food, or heat non-animal foods to 145 deg F after bare hand contact.

10. *** No handwashing sign in the kitchen near the dish washing area. *** COS Inspector provided sign and it was posted.
49. *** Several items of equipment including bottoms of coolers, microwaves, and toasters on food preparation line had an accumulation of food debris and grease. *** Manager said that today was the day that they usually clean that area. The cleaning schedule needs to be increased for that area as it sees heavy use.

6. *** Observed drinks stored by the front soda station. *** Ensure that drinks are stored away from possible areas of contamination.
22. *** Observed a small salad cooler to have items in it sitting above 50F. ***COS All TCS items in the cooler were voluntarily discarded by the PIC. There was a maintenance technician working on the cooler before I left the facility.
28. *** Observed two sanitizer buckets on lines where they could potentially contaminate food. ***COS Buckets were removed from the line. ***R This is a repeat violation. A Risk Control Plan was conducted with the PIC.
45. *** Observed single use take home containers, out of package, on the floor of the dry storage area. ***COS These containers were voluntarily discarded by the PIC.
49. *** Observed multiple non-food contact surfaces to have debris on them such as the HW sink in the mop room, the dry storage racks, as well as a large spill on the floor of the walk-in cooler. *** Ensure a routine cleaning schedule is implemented and followed.
55. *** Observed the floor of the mop room, the walls near the exit door and mop room, and the floor of the pantry to be in need of cleaning. *** Ensure that a routine cleaning schedule is implemented and maintain routine cleaning.
58. *** None of the CFPMs on-site have allergen training. *** Ensure this training is completed by the next routine inspection.
