Employee at grill grabbed sauteed peppers from cold holding with bare hand and placed them in the microwave to heat up. They were heated to 110 deg F in the microwave.

I stopped the employee from adding them to an omelet, as they were not heated to 145 deg F, the temperature that non-animal foods are deemed safe to eat after bare hand contact. He threw the heated and cold-holding peppers away and added a scoop to the new peppers in cold holding. Use a scoop or gloved hand to portion food, or heat non-animal foods to 145 deg F after bare hand contact.

Manager said that today was the day that they usually clean that area. The cleaning schedule needs to be increased for that area as it sees heavy use.

All TCS items in the cooler were voluntarily discarded by the PIC. There was a maintenance technician working on the cooler before I left the facility.
