LARRY'S DRIFTWOOD VIEW FULL INSPECTION

55. *** Several tiles are missing from the kitchen areas. *** Replace ceiling tiles so that the interior of the walls and ceilings are not exposed.
55. *** Floors, walls, and ceiling, hard-to-reach areas under and behind equipment in the kitchen and at the bar have a buildup of debris. *** Increase cleaning scheduled before next routine inspection.
51. *** There is no water coming out of the handwashing sink in the kitchen. *** Have a licensed plumber fix the hand sink. Send me an invoice by 10/28/24.
49. *** Equipment in the back room, like fan and shelves, hand sink, the bottoms of counters, shelves, racks in coolers, handles and other equipment have a buildup of flour. *** This is a repeat violation. Increase regular cleaning schedule of places were flour tends to settle.
38. *** Screen on the back door was loose. *** Fix screen so that it covers entire opening in the door. Screens must be tightly fitting to prevent entry by flying insects.
28. *** Mineral oil, sanitizer spray, and hand soap were stored with bottles of salt, sriracha, and Parmesan cheese underneath the prep table in the back. *** COS Employee removed food items from the shelf and cleaned it. Chemicals cannot be stored with food products due to risk of contamination.
22. *** All the food, including sauce, sausage, mushrooms, onion, peppers, olives, and cheese, in the prep table was 54 deg F and below. *** Employees threw out all food in the prep table. I suggested that ice be put in the bottom of the prep table to hold temperature better. The temperature on the prep table was 67 deg F when I started by inspection, and 46 deg F at the end of my inspection. Keep top closed when possible. Employee said that the prep table was new, and believed that it was an electrical issue. Have a certified, licensed professional look at the prep table. Get an invoice of work done to my by 10/28/24.
10. *** There was a dirty cup in the handwashing sink. *** COS Cup was moved out of the sink.
8. *** Employees were washing their hands in a dump sink because the handwashing sink was not in operation. *** Have a licensed plumber fix the handwashing sink, and get an invoice of service to me by 10/28/24.
8. *** Employee moved the trash can with hands in the bag and then started to move cans of sauce to open them. *** COS Inspector stopped him, and informed him that he needed to wash his hands after handling trash, and before working with food.
6. *** Employee had drink on the food prep table in the back room near the cheese slicers. *** COS Employee moved his drink to a lower shelf on the prep table. Employees must have drinks in a place that does not exposed food to contamination.

55. *** Coving in the kitchen and warewashing area is peeling off in places. *** Replace the coving.
49. *** Equipment in the back room, like fan and shelves, hand sink, the bottoms of counters, and other equipment have a buildup of flour. *** Increase regular cleaning schedule of places were flour tends to settle.
40. *** Employee with longer beard was not wearing a beard restraint. *** Facial hair needs to be covered a beard net. By next routine inspection, obtain beard nets for employees with facial hair.
39. Found tomato puree and canned mushrooms on the floor of the kitchen and cheese, pepperoni, and green pepper on the floor of the walk-in in the back. *** COS Employee moved the food off the floor. He explained that the food had been delivered this morning. Food needs to be stored 6 in off the floor.
2. *** Employee has a CFPM certificate, but it is not on file at the facility and cannot be found digitally. *** Find CFPM certificate or retake the test to become certified. Certificate must be accessible to be presented during inspection.

49. *** Most of the equipment in the back prep room is covered in dust and flour. The ice machine has a build up of debris. *** Next inspection, the equipment should be free of accumulation of dust and flour. I will return on 8/22/23 to confirm that the ice machine has been cleaned.
39. *** Lard in the walk-in cooler was not covered. Bag of flour near the backdoor was on the floor. *** COS Lard was covered and flour was moved off the floor.
28. *** Sanitizer bottles where stored under the cheese prep area near seasoning boxes. *** COS Employee moved the sanitizer boxes to the dishwashing area away from food storage.
23. *** Pineapple, shrimp, cheese, mushrooms, Canadian bacon, sausage all did not have a date on the containers. *** COS Employees and owner labeled food where they knew the preparation date, and threw out shrimp, pineapple, and bacon where they did not know the prep date. All TCS food needs a preparation date.
16. *** Cheese grater machine had build up of cheese. *** COS Employee said that it had not been used today. He cleaned the machine after discussion.
