16. Observed 2 chlorine sanitizer buckets that had a concentration of 0 ppm. These buckets were re-made to 100 ppm, COS.
38. Observed numerous flies throughout the facility, mostly in the kitchen near the garbage containers.
49. Observed a build up of dirt, dust, and food debris under equipment in prep area. Ensure these areas are cleaned more frequently.
2. The owner/PIC has had his CFPM and renewed it at least twice. He stated that he plans to send his manager to take the course soon. Please send documentation to courtneys@tchd.net when this has been completed.

2. Person in charge (PIC) states his food manager certification has lapsed.
Ensure one certified food manager is present at all times.
5. PIC was unable to produce norovirus clean up policy or explain procedure to respond to vomiting and diarrhea events.
PIC was given a TCHD norovirus clean up handout. Be able to produce this poster at next routine inspection and when clean up is needed.
16. Meat slicers were found to have small amounts of food debris.
Food contact services should remain clean to sight and touch.
Ensure routine cleaning of the meat slicers.
16. A bucket of chlorine sanitizer measured at 200 ppm.
*Corrected on Site (COS) PIC remade the bucket an appropriate concentration.
Chlorine sanitizer should be maintained at 50-100 ppm.
48. PIC was not able to produce test strips for chlorine bucket.
Obtain chlorine test strips and send a picture of the strips or copy of receipt to iklein@tchd.net by 4/1/2024.
58. PIC states he has not taken the required allergen training.
Ensure this training is complete by next routine inspection.

10. Hand washing sink in back food prep area had a box on it.
Box was moved.
16. Observed employee rinsing off food contact equipment without using wash, rinse, and sanitize.
Three compartment sink was properly set up with inspector's direction.
22. Refrigerated make table is not maintaining TCS foods at 41F. or below.
Cut tomatoes and lettuce were voluntarily discarded by Person-in-Charge.
23. Packaged humus in refrigerator did not have use-by date label.
Date label was provided by Person-in-Charge.
2. No Certified Food Protection Manager was present.
Certified Food Protection manager must be on staff within 90 days. (Employee signed up for November class).
