Probe thermometer was calibrated by Person-in-Charge.
55. Hood filters have build-up of grease. Clean and maintain clean before next regular inspection.

20. Cooked egg rolls in tubs were cooling at room temperature one hour in kitchen and were at 86F. Once cooked TCS foods are less than 135F., they must be actively cooled.
Tubs of egg rolls were actively cooled in walk-in refrigerator.

Cooked pork and raw bean sprouts were moved to walk-in refrigerator. Refrigerated make table unit was adjusted to lower temperature. Do not use for TCS perishable food unit unit can maintain temperature of food at 41F. or lower.
